The three U'Weini cuvées

Here’s what’s actually inside the bottles, the part that really matters. 🥹

The red: Bordeaux Supérieur 2022

The blend: Cabernet Sauvignon 55%, Merlot 45%, the classic Bordeaux pairing. Merlot brings the fruit and the roundness, Cabernet Sauvignon the structure and the backbone. Made at Château Chauvet Dalla Longa, certified HVE level 3 (Haute Valeur Environnementale, a French government environmental certification; level 3 is the most demanding tier, focused on biodiversity and reduced chemical inputs).

In the glass: juicy red fruit with a touch of sweet spice. A modern red, supple, with nothing to prove.

Serving temperature: 15–17 °C (59–63 °F). Not 20 °C, not "room temperature", a red served too warm just tastes of alcohol. Twenty minutes in the fridge before serving makes a visible difference.

Our favourite pairing: a burger. The fat in the cheese and the sweetness of the bun get a proper counterweight from the fruit and the structure.

The white: Bordeaux Blanc Sec 2024

The blend: 70% Sauvignon blanc, 30% Sémillon, the historic Bordeaux white duo. Sauvignon Blanc brings the citrus edge and the acidity; Sémillon rounds it out and adds weight, meaning a fuller, less cutting feel in the mouth. Like the red, it's made at Château Chauvet Dalla Longa.

In the glass: citrus leads, with a touch of exotic fruit and floral notes behind it. Fresh and crisp.

Serving temperature: 10–12 °C (50–54 °F). Watch the straight-from-the-freezer trap: too cold and you numb the aromas until all that's left is the chill.

Our pairings: ceviche, sushi, lemon chicken. It also holds its own as an aperitif, with fresh goat's cheese or grilled prawns.

The rosé: Côtes de Provence AOP 2025

The blend: 50% Grenache, 40% Cinsault, 8% Syrah, the classic backbone of Provence rosé. Grenache gives the fruit, Cinsault the lightness, Syrah a little colour and body. It's made at Château Matheron.

In the glass: light and thirst-quenching, with white floral notes and a zesty citrus edge. There's also what tasters call minerality, in plain terms, a faintly saline, almost stony sensation that adds freshness and length.

Serving temperature: 8–10 °C (46–50 °F). An ice bucket does the job better than the freezer, with no risk of forgetting it in there.

Our pairings: tacos, spiced food from anywhere or an aperitif that runs long on a terrace.
